Inspired by Jennifer's return to Los Angeles for the holidays, where it's currently 70 degrees, here is a great recipe to share some of the sunshine with you Washingtonians.
1 mango, skin removed, cut into cubes
1 cup diced pineapple
5 strawberries, stems removed
2 handfuls of spinach
Half a cucumber, cut into cubes
1 cup of coconut water
Combine all ingredients into a blender (I use a Vitamix for the ultimate smooth texture) and puree for 1-2 minutes. Substitute coconut water for any liquid of your choice: water, almond milk, green tea, anything!
Serves 2 people or 32 oz.
