8 oz Pumpkin Chai

1 ripe banana, chopped + frozen

1 medium sweet potato, cooked and cooled

1 tablespoon pumpkin puree (if you don't have time to cook the sweet potato, use more pumpkin puree)

½ tsp Cinnamon, nutmeg, or other spices to taste

1 tsp coconut oil

Toppings of choice (pumpkin seeds, cacao nibs, almonds, coconut flake, fresh banana slices, pom seeds...)

**Looking to make it a bit sweeter? Add 1 tsp of maple syrup**

  1. Peel sweet potatoes and cut into cubes. Add sweet potatoes to a saucepan, cover with water and heat on high. Once water begins to boil reduce heat. Cook for 15-20 min or till tender. Add potatoes to food processor or blender. Mix on high till smooth. Pour puree into tupperware and place in fridge. (Do this step the night before or allow to cool in fridge for an hour)
  2. Add all ingredients in blender and blend on high till smooth. You may need to stop a few times to stir. If you need to add more Pumpkin Chai do so gradually.
  3. Pour into bowl and garnish as you please. We love topping with pumpkin seeds, cacao nibs, raw almonds and pom seeds.
  4. Enjoy!
